
Ingredients:
- 1 8oz package of cream cheese, softened
- 1 ½ cups of cold milk
- 1 package (3.4 oz) instant vanilla pudding
- 1 ½ cups whipped topping, thawed and divided
- 25 vanilla cookies, coarsely chopped
- 1 ½ cups mixed berries (blueberries, strawberries, raspberries etc)
Directions:
- Beat the cream cheese with mixer until creamy.
- Gradually beat in milk.
- Add dry pudding mix, mix well.
- Whisk in 1 cup of whipped topping.
- Layer half each of wafers, berries and pudding mixture in 8 parfait glasses, repeat layers.
- Top with remaining whipped topping.

Next Monday is Memorial Day, and that always makes me think of picnics, hot dogs and of course ice cream. I love the flavor of homemade ice cream, but am not willing to buy another appliance (ice cream maker) for something would only use once or twice a year. That’s why this recipe is perfect – you can have homemade ice cream in 10 minutes, using your existing kitchen appliances. You can make this in a food processor or a blender, the instructions vary slightly, so I’ve included both.

Ingredients:
- 1 (10 ounce) package frozen fruit of your choice
- 1/2 cup sugar
- 2/3 cup heavy cream
Food Processor Directions:
- Combine the frozen strawberries and sugar in a food processor. Process until the fruit is roughly chopped.
- With the processor running, slowly pour in the heavy cream until fully incorporated.
- Serve immediately; excess can be frozen for up to a week.
Blender Directions:
- Start with 1/3 of the heavy cream in the blender, adding fruit while the blender is running.
- Allow the fruit to become roughly chopped.
- Pour in remaining cream until fully incorporated, while the blender is running.
- Serve immediately; excess can be frozen for up to a week.

Ingredients:
- 1 cup warm milk (110 degrees F/45 degrees C)
- 2 eggs, room temperature
- 1/3 cup margarine, melted
- 4 1/2 cups bread flour
- 1 teaspoon salt
- 1/2 cup white sugar
- 2 1/2 teaspoons bread machine yeast
- 1 cup brown sugar, packed
- 2 1/2 tablespoons ground cinnamon
- 1/3 cup butter, softened
- 1 (3 ounce) package cream cheese, softened
- 1/4 cup butter, softened
- 1 1/2 cups confectioners’ sugar
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Directions:
- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
- After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
- Roll dough into a 16×21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9×13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
- Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners’ sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.
